1/2 cup all-purpose flour
5 cups whole milk, warmed
4 oz cream cheese, softened
1 tsp Dijon mustard
1 tsp Worcestershire sauce

1/2 tsp onion powder
1 tsp salt (or to taste)

4 cups shredded sharp cheddar cheese
2 cups shredded Gruyère cheese
2 cups shredded smoked Gouda cheese
Wood chips or chunks for smoking (apple, cherry, or pecan recommended)

Instructions

Step 1: Preheat your smoker to 225-250°F (107-121°C). Prepare your chosen wood chips or chunks for smoking according to your smoker’s instructions.
Step 2: Cook the pasta according to package directions, but aim for al dente. It should still have a slight bite. Drain well and set aside.
Step 3: In a large saucepan or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
Step 4: Gradually whisk in the warm milk, a little at a time, until smooth. Continue to cook, stirring frequently, until the sauce thickens and comes to a gentle simmer, about 5-7 minutes.
Step 5: Remove the saucepan from the heat. Add the softened cream cheese and stir until fully melted and smooth.
Step 6: Begin adding the shredded cheeses (cheddar, Gruyère, smoked Gouda) to the sauce in batches, stirring constantly until each batch is fully melted and incorporated before adding more. Do not return to high heat; the residual heat will melt the cheese.
Step 7: Stir in the Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasonings as needed.
Step 8: Add the cooked pasta to the cheese sauce and stir gently until every noodle is thoroughly coated.
Step 9: Pour the mac and cheese mixture into a large, oven-safe baking dish (a 9×13 inch dish works well). Ensure it’s spread evenly.
Step 10: Place the baking dish directly onto the grates of your preheated smoker. Smoke for 1.5 to 2.5 hours, or until the mac and cheese is bubbly around the edges, golden brown on top, and has absorbed a beautiful smoky flavor. The exact time will depend on your smoker and desired smoke intensity.
Step 11: For an extra crispy top, sprinkle some additional shredded cheese (like more cheddar or a mix with Parmesan) over the top during the last 30 minutes of smoking.
Step 12: Carefully remove the smoked mac and cheese from the smoker. Let it rest for 10-15 minutes before serving to allow the sauce to set and prevent it from being too runny. Serve warm and enjoy!

Notes

For the best results, use freshly shredded cheeses. Pre-shredded cheeses often contain anti-caking agents that can make your sauce grainy. Also, make sure your milk is warm before adding to the roux to prevent lumps.
