Delicious vegan upside-down apple cake with caramelized apples on a white platter.

Vegan Upside-Down Apple Cake

This delightful vegan upside-down apple cake features a moist and tender cake base topped with sweet caramelized apples, offering a perfect plant-based treat for any occasion.

  • Total Time: 50-55 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

3 medium apples (peeled, cored, and sliced)
1/4 cup brown sugar
2 tablespoons vegan butter or coconut oil
1 teaspoon cinnamon (for topping)
1 1/2 cups all-purpose flour
1 cup almond milk (or any plant-based milk)
1/2 cup granulated sugar
1/3 cup vegetable oil or melted coconut oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon (for cake)

Instructions

Step 1: Prepare the Topping: In a skillet over medium heat, melt the vegan butter or coconut oil. Stir in the brown sugar and 1 teaspoon cinnamon until combined. Add the apple slices and cook for about 5-7 minutes, or until the apples are slightly softened and caramelized. Remove from heat and set aside.
Step 2: Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch round cake pan.
Step 3: Arrange the Apples: Pour the caramelized apple mixture into the bottom of the prepared cake pan, spreading it evenly.
Step 4: Make the Cake Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and 1 teaspoon cinnamon.
Step 5: Combine Wet Ingredients: In a separate bowl, mix together the almond milk, vegetable oil (or melted coconut oil), apple cider vinegar, and vanilla extract.
Step 6: Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
Step 7: Pour the Batter: Gently pour the cake batter over the arranged apples in the cake pan, spreading it evenly with a spatula.
Step 8: Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
Step 9: Cool and Serve: Allow the cake to cool in the pan for about 10 minutes. Then, carefully invert the cake onto a serving plate. Lift the pan gently to reveal the beautiful caramelized apple topping. Let it cool slightly before slicing and serving.

Notes

For best results, use a mix of sweet and tart apples like Honeycrisp and Granny Smith. Ensure your plant-based milk and apple cider vinegar are at room temperature for optimal batter consistency. For an extra nutty flavor, sprinkle chopped walnuts or pecans over the apple layer before adding the cake batter.
