Ingredients
1/2 cup natural creamy peanut butter
3 tablespoons low-sodium soy sauce
1 tablespoon maple syrup
1 tablespoon fresh lime juice
1 teaspoon fresh grated ginger
2 cloves garlic, minced
1 tablespoon sesame oil
2 cups broccoli florets
1 red bell pepper, sliced
1 cup snap peas
1 large carrot, julienned
1/4 cup water (to thin sauce if needed)
Optional: crushed peanuts and green onions for garnish
Instructions
Step 1: In a small bowl, whisk together the peanut butter, soy sauce, maple syrup, lime juice, ginger, and minced garlic until smooth. If the sauce is too thick, add water one tablespoon at a time until you reach your desired consistency for the vegetable stir fry with peanut sauce.
Step 2: Heat the sesame oil in a large wok or skillet over medium-high heat. Once the oil is shimmering, add the broccoli and carrots.
Step 3: Stir-fry the hardy vegetables for 3-4 minutes until they begin to soften slightly but still retain their bright color.
Step 4: Add the bell peppers and snap peas to the pan. Continue to stir-fry for another 2-3 minutes, tossing frequently to ensure even cooking for your vegetable stir fry with peanut sauce.
Step 5: Pour the prepared peanut sauce over the vegetables. Toss everything together for 1-2 minutes until the sauce is bubbly and the vegetables are well-coated.
Step 6: Remove from heat and serve immediately over rice or noodles. Garnish with crushed peanuts and sliced green onions if desired.
Notes
To make this gluten-free, substitute the soy sauce with tamari or coconut aminos.
