Ingredients
3 very ripe bananas, mashed
1 cup Medjool dates, pitted and chopped
1/2 cup walnuts, toasted and roughly chopped
1/2 cup unsalted butter, softened
3/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup fresh orange juice (for syrup)
1/4 cup granulated sugar (for syrup)
1 tbsp orange zest (for syrup)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan or cake tin with butter and a light dusting of flour.
Step 2: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract and mashed bananas.
Step 3: Sift the flour, baking powder, baking soda, and salt into the wet mixture. Fold gently with a spatula until just combined, being careful not to over-mix.
Step 4: Fold in the chopped Medjool dates and toasted walnuts. Pour the batter into the prepared pan and smooth the top.
Step 5: Bake for 40-45 minutes, or until a skewer inserted into the center comes out clean. While the cake bakes, prepare the orange syrup by simmering orange juice, granulated sugar, and zest in a small saucepan for 5 minutes until slightly thickened.
Step 6: Remove the cake from the oven. While still warm, poke holes across the surface and pour the orange syrup evenly over the top. Let it soak in for at least 15 minutes before serving.

Always use the ripest bananas possible for the best flavor and moisture.
