Ingredients
1.5 cups all-purpose flour
1 cup granulated sugar
1.5 teaspoons baking powder
1 teaspoon ground cinnamon
0.5 teaspoon ground nutmeg
0.25 teaspoon salt
1 cup finely grated carrots
1 can (8 oz) crushed pineapple, partially drained
0.5 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 cup packed brown sugar
1 tablespoon cornstarch
1.25 cups boiling water
Instructions
Step 1: Preheat your oven to 350°F (175°C) and lightly grease an 8×8 inch square baking dish.
Step 2: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
Step 3: In another bowl, beat the egg slightly, then stir in the vegetable oil, vanilla extract, grated carrots, and crushed pineapple.
Step 4: Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix the batter for your warm carrot pineapple pudding cake.
Step 5: Spread the batter evenly into the prepared baking dish using a spatula.
Step 6: In a small bowl, mix the brown sugar and cornstarch together, then sprinkle this mixture evenly over the top of the batter.
Step 7: Carefully pour the boiling water over the back of a spoon onto the sugar layer so it covers the entire surface without disturbing the batter too much.
Step 8: Bake in the center of the oven for 40-45 minutes, or until the cake part is set and the sauce is bubbling around the edges.
Step 9: Remove from the oven and let the warm carrot pineapple pudding cake cool for 10-15 minutes before serving to allow the sauce to thicken.
Notes
For best results, use fresh carrots and do not over-drain the pineapple. The moisture is key to the pudding texture.
