Ingredients
1.5 cups Medjool dates, pitted and chopped
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1.5 cups all-purpose flour
1.5 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp salt
1 cup powdered sugar
2–3 tbsp fresh orange juice
1 tbsp orange zest
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan or a loaf pan.
Step 2: In a small bowl, combine the chopped dates, boiling water, and baking soda. Let it sit for 10-15 minutes to soften.
Step 3: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the vanilla extract for the warm spiced date cake with orange glaze base.
Step 5: In a separate bowl, whisk together the flour, cinnamon, ginger, cloves, and salt.
Step 6: Gradually add the dry ingredients to the creamed mixture, alternating with the date mixture (including the soaking water).
Step 7: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: While the cake bakes, whisk together the powdered sugar, orange juice, and orange zest until smooth to create the orange glaze.
Step 9: Remove the cake from the oven and let it cool for 10 minutes before drizzling the glaze over the top while it is still warm.
Notes
Ensure the dates are well-chopped for a consistent texture. For extra flavor, add a pinch of cardamom to the spice mix.
