Ingredients
8 cups (2 liters) apple cider or good quality apple juice
1 cup orange juice (freshly squeezed preferred)
1/4 cup lemon juice (freshly squeezed preferred)
1/2 cup fresh cranberries (optional, for extra tartness and color)
1–2 oranges, sliced into rounds
1 lemon, sliced into rounds
4–6 cinnamon sticks
1 tbsp whole cloves
3–4 star anise pods
1/4 tsp allspice berries (optional)
1/4 cup maple syrup or brown sugar (adjust to taste)
Optional garnishes: roasted apples, extra orange slices, cinnamon sticks, fresh rosemary sprigs
Instructions
Step 1: In a large stockpot or slow cooker, combine the apple cider, orange juice, and lemon juice.
Step 2: Add the cranberries (if using), orange slices, lemon slices, cinnamon sticks, whole cloves, star anise, and allspice berries to the pot.
Step 3: Stir in the maple syrup or brown sugar. Start with 1/4 cup and adjust to your desired sweetness after simmering.
Step 4: Bring the mixture to a gentle simmer over medium-low heat on the stovetop, or set your slow cooker to low. Do not boil. Let it simmer gently for at least 1 hour to allow the flavors to meld and deepen. For best results, simmer for 2-3 hours.
Step 5: If desired, carefully strain the Wassail through a fine-mesh sieve into a clean serving pitcher or punch bowl to remove the solids. Alternatively, leave the fruit and spices in for a rustic presentation.
Step 6: While the Wassail is simmering, core a few small apples for garnish. You can roast them with a little brown sugar and butter at 350°F (175°C) for 15-20 minutes until slightly tender and caramelized.
Step 7: Ladle the warm Wassail into heat-proof mugs. Garnish each serving with a roasted apple, a fresh orange slice, or an extra cinnamon stick. Serve immediately and enjoy!
Notes
For an adult version, add 1-2 ounces of dark rum or brandy to individual servings. This Wassail recipe can be made ahead and reheated gently.
