Ingredients
6 cups seedless watermelon, cubed
1 cup fresh blueberries
1 cup fresh raspberries
1 cup strawberries, hulled and quartered
1/4 cup fresh mint leaves, chiffonade
1 large lime, zested and juiced
1 tablespoon honey or agave nectar (optional)
Instructions
Step 1: Prepare the watermelon by cutting it into uniform 1-inch cubes and placing them in a very large mixing bowl.
Step 2: Gently wash the blueberries, raspberries, and strawberries. Pat them dry with a paper towel to remove excess moisture.
Step 3: Add the strawberries and blueberries to the bowl with the watermelon.
Step 4: In a small jar or bowl, whisk together the lime juice, lime zest, and honey (if using) to create a simple dressing.
Step 5: Drizzle the lime dressing over the fruit and use a large spoon to gently toss the ingredients together until evenly coated.
Step 6: Carefully fold in the delicate raspberries and the fresh mint leaves just before serving to keep them intact.
Step 7: Serve immediately or chill in the refrigerator for up to 1 hour for maximum refreshment.
Notes
For the best flavor, let the salad sit for 10 minutes after tossing so the lime juice can macerate the fruit slightly.
