Ingredients

5 cups seedless watermelon, cut into chunks
23 tablespoons fresh lime juice (from 12 limes)
12 tablespoons honey or agave nectar (optional, to taste)

Instructions

Step 1: Cut the seedless watermelon into approximately 5 cups of chunks. Ensure they are small enough to blend easily.
Step 2: Combine the watermelon chunks and 2 tablespoons of fresh lime juice in a high-speed blender. If using, add 1 tablespoon of honey or agave nectar.
Step 3: Blend the mixture until completely smooth and free of any pulp. If desired, strain through a fine-mesh sieve for an ultra-smooth consistency, but this is optional.
Step 4: Taste the watermelon mixture. If it’s not sweet enough or needs more tang, add the remaining lime juice or sweetener (1 tablespoon at a time) and blend again until well combined.
Step 5: Carefully pour the blended mixture into your popsicle molds, filling each almost to the top, leaving a small space for expansion.
Step 6: Insert popsicle sticks into the molds. If your molds have lids, secure them. If using paper cups, cover with foil and poke a stick through the center.
Step 7: Place the filled molds in the freezer and freeze for at least 4-6 hours, or preferably overnight, until the popsicles are completely solid.
Step 8: To unmold, briefly run the popsicle molds under warm water for 10-20 seconds to gently loosen the edges. Carefully pull the popsicles out.
