1/2 cup crumbled feta cheese
1/4 cup fresh mint leaves, roughly chopped
1/4 cup finely chopped red onion (optional, but recommended for a savory kick)
2 tablespoons fresh lime juice
1 tablespoon extra virgin olive oil
1/2 teaspoon freshly ground black pepper
Pinch of flaky sea salt (optional, to taste)

Instructions

Step 1: Prepare the Watermelon. Cut the seedless watermelon into 1-inch cubes. If using a watermelon with seeds, remove them as you cut. Place the watermelon cubes in a large serving bowl.
Step 2: Add Remaining Ingredients. Add the crumbled feta cheese, chopped fresh mint leaves, and finely chopped red onion (if using) to the bowl with the watermelon.
Step 3: Make the Dressing. In a small bowl, whisk together the fresh lime juice and extra virgin olive oil. Season with freshly ground black pepper. Add a pinch of flaky sea salt if desired, keeping in mind that feta is already salty.
Step 4: Dress and Toss. Pour the dressing over the watermelon mixture. Gently toss all ingredients together until well combined.
Step 5: Chill and Serve. For best flavor, cover the bowl and refrigerate for at least 15-30 minutes before serving. This allows the flavors to meld beautifully. Serve chilled.

Notes
