1 cup crystallized honey

Instructions
Step 1: Ensure your honey is in a crystallized state. If liquid, allow it to crystallize naturally in a cool place, or add a small amount of already crystallized honey to encourage the process.
Step 2: Transfer the crystallized honey to a large, clean, and dry mixing bowl.
Step 3: Using a stand mixer with a whisk attachment (or a hand mixer), begin whipping the honey on low speed to gently break down the larger crystals, about 2-3 minutes.
Step 4: Increase the mixer speed to medium-high. Continue whipping, scraping down the sides of the bowl occasionally, until the honey becomes opaque, lighter in color, and significantly increased in volume. This typically takes 10-15 minutes.
Step 5: If using, add the vanilla extract during the last minute of whipping and mix until just combined.
Step 6: Once the whipped honey has reached a light, creamy, and spreadable consistency, turn off the mixer.
Step 7: Transfer the finished whipped honey to an airtight container. Store at room temperature, away from direct sunlight, for up to several months.
Notes
For best results, start with honey that has already crystallized. If your honey is liquid, you can encourage crystallization by placing it in the refrigerator for a few days or by adding a small amount of crystallized honey to it and stirring. The whipping process incorporates air, making it light and fluffy. Store in an airtight container at room temperature.
