Ingredients
2 tsp ceremonial grade matcha powder
3 tbsp aquafaba (liquid from canned chickpeas)
2 tbsp granulated sugar or maple syrup
1/2 cup milk of choice (oat, almond, or dairy)
Ice cubes
Optional: vanilla extract
Instructions
Step 1: In a clean mixing bowl, pour the aquafaba and use a hand mixer to beat it until soft peaks begin to form.
Step 2: Sift the matcha powder into the bowl to ensure there are no lumps in your whipped matcha latte.
Step 3: Add the sugar and vanilla extract, then continue whisking on high speed until the mixture is thick, glossy, and holds stiff peaks.
Step 4: Fill a glass with ice cubes and pour in your milk of choice, leaving about two inches of space at the top.
Step 5: Gently dollop the whipped matcha mixture onto the milk and serve your whipped matcha latte immediately with a straw or spoon.
Notes
Ensure your whisk and bowl are completely grease-free to help the aquafaba whip up properly for your whipped matcha latte.
