Ingredients
1 wild turkey breast (approx. 2 lbs), cleaned
4 cups water
1/4 cup kosher salt
1/4 cup brown sugar
4 cloves garlic, smashed
1 tbsp black peppercorns
4 tbsp unsalted butter, softened
1 tbsp fresh rosemary, minced
1 tbsp fresh thyme, minced
1/2 tsp black pepper
Instructions
Step 1: In a large bowl, whisk together water, salt, brown sugar, smashed garlic, and peppercorns until salt and sugar dissolve.
Step 2: Submerge the wild turkey breast in the brine, cover, and refrigerate for 8-12 hours.
Step 3: Remove turkey from brine, rinse with cold water, and pat completely dry with paper towels.
Step 4: Preheat your oven to 325°F (165°C) and grease a small roasting pan.
Step 5: Mix softened butter with minced rosemary, thyme, and black pepper in a small bowl.
Step 6: Rub the herb butter mixture all over the turkey breast, ensuring an even coating.
Step 7: Roast in the oven until the internal temperature reaches 160°F (71°C), which usually takes about 45-60 minutes.
Step 8: Remove from oven, tent loosely with foil, and let rest for 10-15 minutes before slicing against the grain.
Notes
Always use a meat thermometer for wild turkey to avoid overcooking. If the breast is very small, check the temp at 30 minutes.
