Classic Southern Wilted Lettuce with Warm Bacon Dressing

A timeless, comforting wilted lettuce recipe featuring crisp lettuce leaves gently wilted with a warm, tangy bacon dressing. Simple, flavorful, and a perfect side dish for any occasion.

  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

6 cups fresh lettuce, such as romaine or leaf lettuce, torn into bite-sized pieces
6 slices thick-cut bacon, chopped
1/4 cup apple cider vinegar
1–2 tablespoons granulated sugar (to taste)
1/4 teaspoon black pepper
Optional: Pinch of salt (only if needed, bacon is salty)
Optional: 1/4 cup chopped green onions or chives for garnish

Instructions

Step 1: Wash and thoroughly dry your lettuce. Tear or chop it into bite-sized pieces and place it in a large heatproof bowl. Set aside.
Step 2: In a large skillet, cook the chopped bacon over medium heat until crispy. This is a crucial step for our perfect wilted lettuce recipe. Remove the crispy bacon bits with a slotted spoon and set them aside on a paper towel-lined plate. Leave the rendered bacon fat in the skillet.
Step 3: Reduce the heat to low. Carefully add the apple cider vinegar, sugar, and black pepper to the hot bacon fat in the skillet. Stir constantly until the sugar has dissolved and the mixture is well combined and just beginning to simmer. This forms the warm dressing for your wilted lettuce recipe.
Step 4: Immediately pour the hot dressing over the lettuce in the heatproof bowl. Toss gently but thoroughly until the lettuce begins to wilt and is evenly coated with the dressing. The warmth of the dressing will transform the greens into a tender-crisp texture, a hallmark of a great wilted lettuce recipe.
Step 5: Add most of the crispy bacon bits back into the lettuce and toss again. Save a few for garnish if desired.
Step 6: Taste and adjust seasoning if necessary. You likely won’t need salt due to the bacon, but you can add more sugar or vinegar if you prefer a different balance. Serve immediately, garnished with the remaining bacon bits and chopped green onions or chives, if using. Enjoy this classic wilted lettuce recipe warm!

Notes

For a vegetarian version, omit bacon and sauté 1 tbsp minced shallots in 1 tbsp olive oil, then proceed with adding vinegar and sugar. You can also add hard-boiled egg slices for extra protein and creaminess. This wilted lettuce recipe is best served fresh and warm.
