Ingredients
2 lbs yellow squash, trimmed and sliced into 1/4-inch rounds
2 tbsp olive oil (or butter)
1/2 medium onion or 2 shallots, finely diced
3–4 cloves garlic, minced
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme leaves, chopped
1 tbsp fresh lemon juice (optional, for brightness)
Instructions
Step 1: Prepare the squash by washing it thoroughly, trimming the ends, and slicing it into even 1/4 to 1/2-inch thick rounds. Mince the garlic and finely dice the onion or shallots. Chop your fresh herbs.
Step 2: Heat the olive oil (or butter) in a large, heavy-bottomed skillet over medium to medium-high heat until shimmering.
Step 3: Add the diced onion or shallots to the hot pan and sauté for 2-3 minutes until they begin to soften and turn translucent. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Step 4: Add the sliced yellow squash to the pan. Spread it out in a single layer if possible; if your pan is too crowded, cook in two batches. Season generously with salt and black pepper. Sauté, stirring occasionally, for 8-12 minutes, or until the squash is tender-crisp and slightly golden in spots.
Step 5: Remove the pan from the heat. Stir in the fresh chopped parsley and thyme. If desired, add a squeeze of fresh lemon juice for an extra burst of brightness. Taste and adjust seasonings as needed before serving immediately.
Notes
This recipe is incredibly versatile. Feel free to experiment with different herbs like rosemary or basil, or add a pinch of red pepper flakes for a subtle kick. For best results, don’t overcrowd the pan!
