Ingredients
1/4 cup fresh yuzu juice (or high-quality bottled)
1/2 cup neutral oil (such as grapeseed, avocado, or light extra virgin olive oil)
1–2 tablespoons honey or maple syrup (to taste)
1 clove garlic, minced (optional)
1 teaspoon fresh ginger, grated (optional)
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
Instructions
Step 1: Gather all your ingredients: yuzu juice, oil, sweetener, garlic, ginger, salt, and pepper.
Step 2: In a medium bowl, combine the yuzu juice, honey or maple syrup, minced garlic (if using), and grated ginger (if using). Whisk these ingredients together until the sweetener has dissolved completely. If using fresh yuzu, you can grate a pinch of the zest into this mixture for extra aroma.
Step 3: Slowly drizzle in the oil while continuously whisking vigorously. Continue whisking until the mixture is emulsified and appears creamy and uniform, without visible separation of oil and juice.
Step 4: Season the vinaigrette with sea salt and freshly ground black pepper. Taste and adjust the seasoning as needed, adding more salt, pepper, or sweetener until the flavor profile is perfectly balanced.
Step 5: If using immediately, serve. If preparing ahead, transfer the yuzu vinaigrette and marinade to an airtight container. Store in the refrigerator for up to one week. Give it a good shake or whisk before each use.
Notes
For best results, always use the freshest yuzu available. If using bottled yuzu juice, ensure it’s 100% pure without additives. This vinaigrette is perfect for meal prep; store it in an airtight container in the fridge for up to a week. Shake well before each use. When marinating, avoid over-marinating delicate proteins like fish for more than 30 minutes to an hour to prevent the acid from ‘cooking’ them.
