Ingredients
8 oz (250g) halloumi cheese, cut into 1-inch cubes
4–5 clementines, peeled and segmented
1/2 – 1 fresh red chili, thinly sliced (seeds removed for less heat)
2 tbsp olive oil
1 tbsp honey (optional)
Pinch of salt
Pinch of freshly ground black pepper
Fresh mint leaves, for garnish
8–10 wooden or metal skewers (soak wooden skewers for 30 minutes)
Instructions
Step 1: If using wooden skewers, soak them in water for at least 30 minutes. Peel and segment the clementines. Cut the halloumi cheese into even 1-inch cubes. Thinly slice the fresh red chili.
Step 2: Carefully thread the halloumi cubes and clementine segments onto the prepared skewers, alternating them. Tuck a thin slice of chili between pieces as you go. Leave a small gap at each end of the skewer for easy handling.
Step 3: Arrange the assembled skewers on a plate or tray. Drizzle generously with olive oil, then sprinkle with salt and freshly ground black pepper. If using, lightly drizzle with honey.
Step 4: Preheat your air fryer to 200°C (400°F) for about 5 minutes.
Step 5: Carefully place the skewers in the air fryer basket in a single layer, ensuring not to overcrowd. Cook in batches if necessary. Air fry for 10-12 minutes, flipping halfway through, until the halloumi is golden brown and crispy, and the clementines are slightly caramelized.
Step 6: Remove the skewers from the air fryer. Let them cool for a minute. Garnish with fresh mint leaves and serve immediately.
Notes
For best results, do not overcrowd the air fryer basket. Cook in batches if needed. For a spicier kick, leave the seeds in the chili or add a pinch of chili flakes.
