Garlic Parmesan Zoodles Recipe

2 medium zucchinis, spiralized into zoodles
2 tbsp olive oil
4 cloves garlic, minced
1 cup cherry tomatoes, halved
1/4 cup grated Parmesan cheese, plus more for garnish
2 tbsp fresh parsley, chopped
Salt and freshly ground black pepper to taste
(Optional) Pinch of red pepper flakes

Instructions

Step 1: Prepare the Zoodles. Wash and trim the ends of your zucchinis. Using a spiralizer, create zoodles. If you don’t have a spiralizer, you can use a julienne peeler or vegetable peeler to create thin ribbons. Lay the zoodles on a few layers of paper towels and gently pat to remove excess moisture. This is a crucial step for a great zoodles recipe!
Step 2: Sauté Aromatics. Heat the olive oil in a large skillet or non-stick pan over medium heat. Add the minced garlic and optional red pepper flakes, sautéing for about 30 seconds until fragrant. Be careful not to burn the garlic.
Step 3: Cook Tomatoes. Add the halved cherry tomatoes to the skillet and cook for 3-5 minutes, or until they start to soften and burst slightly. Season with a pinch of salt and pepper.
Step 4: Add Zoodles. Add the spiralized zucchini to the skillet. Toss gently with tongs to combine with the garlic and tomatoes. Cook for only 2-3 minutes, stirring constantly, until the zoodles are just tender-crisp. Overcooking will make them watery and soggy, which is not what we want in a delicious zoodles recipe.
Step 5: Finish and Serve. Remove the skillet from the heat. Stir in the grated Parmesan cheese and fresh parsley. Taste and adjust seasoning with salt and pepper as needed. Serve immediately. This simple zoodles recipe is best enjoyed fresh!
