Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger (optional)
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1/2 cup vegetable oil (or unsweetened applesauce)
1 teaspoon vanilla extract
2 cups grated zucchini, squeezed of excess moisture
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line with parchment paper, leaving an overhang on the sides for easy lifting.
Step 2: In a large bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, light brown sugar (packed), ground cinnamon, ground nutmeg, ground ginger, baking soda, baking powder, and salt. Make sure there are no lumps of brown sugar.
Step 3: In a separate medium bowl, whisk together the wet ingredients: eggs, vegetable oil, and vanilla extract.
Step 4: Pour the wet ingredients into the dry ingredients. Mix with a spatula or wooden spoon until just combined. Be careful not to overmix, as this can lead to a tough bread. A few streaks of flour are okay.
Step 5: Gently fold in the squeezed grated zucchini. If adding any optional mix-ins like chocolate chips or walnuts, fold them in now too.
Step 6: Pour the batter into the prepared loaf pan and spread it evenly. You can sprinkle a little extra cinnamon sugar on top for a beautiful crust, if desired.
Step 7: Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. The top should be golden brown and the edges pulling away slightly from the pan.
Step 8: Remove the pan from the oven and let it cool on a wire rack for 10-15 minutes before carefully lifting the bread out of the pan or inverting it onto the rack.
Step 9: Allow the zucchini bread to cool completely on the wire rack before slicing and serving. Store any leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. For longer storage, slices can be individually wrapped and frozen for up to 3 months.
Notes
For best results, make sure to squeeze out as much moisture as possible from the grated zucchini. This prevents the bread from becoming soggy. If you don’t have fresh zucchini, frozen (thawed and squeezed dry) can also work.
