Ingredients
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
Instructions
Step 1: Preheat your oven to 325°F (165°C). Grease and flour two 8×4 inch loaf pans to prevent sticking.
Step 2: In a medium bowl, whisk together the all-purpose flour, salt, baking powder, baking soda, and ground cinnamon until well combined.
Step 3: In a large bowl, beat the eggs until light and fluffy. Add the vegetable oil, sugar, and vanilla extract, mixing thoroughly.
Step 4: Stir the grated zucchini into the egg mixture until evenly distributed.
Step 5: Gradually add the dry ingredients into the wet zucchini mixture. Stir by hand until just combined; do not overmix.
Step 6: Divide the batter evenly between the two prepared loaf pans.
Step 7: Bake for 40 to 60 minutes in the preheated oven, or until a tester inserted into the center comes out clean.
Step 8: Cool the loaves in the pans on a wire rack for 20 minutes before removing them from the pans to cool completely.
Notes
For best results, use medium zucchini and do not peel them. You can add 1 cup of walnuts or chocolate chips for extra flavor.
