1/2 cup packed light brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder

2 large eggs, lightly beaten
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups grated zucchini (about 1 medium zucchini, not squeezed)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease it thoroughly. Ensure all ingredients are at room temperature.
Step 2: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt. Make sure there are no lumps in the brown sugar.
Step 3: In a separate medium bowl, whisk together the lightly beaten eggs, vegetable oil, and vanilla extract until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. With a spatula or wooden spoon, mix just until barely combined. Do not overmix; a few streaks of flour are acceptable.
Step 5: Gently fold in the grated zucchini. If desired, you can also fold in 1 cup of chocolate chips or 1/2 cup of chopped nuts at this stage.
Step 6: Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
Step 7: Bake for 18-22 minutes, or until a wooden skewer or toothpick inserted into the center of a muffin comes out clean. Baking time may vary depending on your oven.
Step 8: Let the muffins cool in the muffin tin for 5 minutes before carefully transferring them to a wire rack to cool completely. This prevents them from becoming soggy.

Notes

For extra flavor, you can add 1/2 cup of chocolate chips or chopped walnuts/pecans to the batter. These muffins also freeze beautifully for up to 3 months. Wrap individually in plastic wrap, then store in an airtight freezer bag.
