Ingredients
3 medium zucchinis, sliced into half-moons
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 425°F (220°C) and lightly grease a large baking sheet or line it with parchment paper for easy cleanup.
Step 2: In a large mixing bowl, combine the sliced zucchinis, olive oil, minced garlic, salt, pepper, and red pepper flakes. Toss thoroughly until every piece is evenly coated.
Step 3: Spread the seasoned vegetables onto the prepared baking sheet in a single, even layer, ensuring they are not overlapping to allow for proper roasting in this zuchinis recipe.
Step 4: Roast in the preheated oven for 10 minutes. Remove the tray and sprinkle the Parmesan cheese evenly over the top of the slices.
Step 5: Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and golden brown and the squash is tender.
Step 6: Remove from the oven, garnish with fresh parsley, and serve immediately while hot.
Notes
For the best results, use a metal baking sheet as it conducts heat better than glass, ensuring the bottom of the squash gets a nice sear.
